During Sookoo’s initial harvest, Osito provided them with their very first registered purchase contract. For Osito - this is one of their most foundational relationships in Ethiopia, a key producing country for them.

The cherries that are used by Sookoo are sourced from surrounding kebeles (neighborhoods/local villages), and the lot names come from the kebele that the cherries originate from (e.g., Shoondhisa, Bookkisa, Tima). The majority of the cherries delivered to Sookoo are two varieties: Gibirinna 74110 & Serto 74112. These varieties stem from a famous group of disease resistant, high yielding cultivars that were selected from the Metu-Bishari forest of the Illubabor Zone in western Ethiopia. These selections were made by the Jimma Agricultural Research Center (JARC) in the mid 1970’s, and today these varieties are some of the most propagated in all of Ethiopia.

Sookoo began with just one drying station in Suke Quto, with two more being built later (one in 2022 and the other in 2023). This year’s lot - purchased from Sookoo - was processed at the Suke Quto station in Shakiso. Unlike in much of Latin America, where coffee is often grown on large estates with thousands of trees, most Ethiopian farmers cultivate small plots. It is not uncommon for coffee to come from home gardens, intercropped with subsistence crops. Coffee in Ethiopia is typically grown in fully or semi-forested systems, resulting in fewer trees per hectare (one hectare equals just under 2.5 acres) and lower yields. Additionally, many Ethiopian coffee producers lack the infrastructure and financial resources to process and dry their own coffee; for them, stations like Suke Quto are essential. Having a trusted, high-integrity partner like Sookoo is a major advantage for these producers: receiving excellent prices and being treated with dignity and respect by Ture Waji and his team.

We selected this coffee to highlight the amazing work of Ture Waji, his team at Sookoo Coffee and the producers of Shoondhisa. This coffee has a remarkably clean profile for a natural, with notes of fresh stone fruit, berries and crisp/clean florals.
