Through the years, Soren’s Project has evolved from a blend to a single origin coffee. Now, \u003c\/span\u003e\u003cspan\u003eas we continue to advance and refine our coffee program, we have re-worked this offering back into a blend.\u003c\/span\u003e\u003cspan\u003e And the redevelopment process involved the very person the blend was originally named for: Soren Fairchild\u003cbr\u003e\u003cbr\u003e\u003c\/span\u003e\u003cspan\u003eWith the help of Soren and the Commonplace Coffee roasting team, Soren’s Project is comprised of coffee from the Grupo Mártir and Divino Niño cooperatives, located in Huila, Colombia. Their hard work has resulted in a sweet coffee with cherry notes as well as a malic, apple-like acidity. After a career in São Paulo working for multinational agribusiness companies, Yuki realized that her hometown coffee industry needed a representative, so she moved back with her father to pursue the opportunity. \u003c\/span\u003e\u003cb\u003e\u003c\/b\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eYuki is a very busy person, overseeing the operations of her two farms (Fazendas Santo Antonio and Olhos D’Água), as well being the CEO of a complex coffee exporting company, Aequitas, that removes intermediaries during the exporting process and, in turn, helps uplift other women farmers in her community. Yuki is building a network for the next generation of farmers Cerrado Mineiro, Brazil, many of which (Yuki included!) are of Japanese-Brazilian descent. This patriotic group is proud of their state and wants nothing more than to see their coffee on menus worldwide. They challenge the regional status quo of selling lower-grade commodity coffee by growing and promoting specialty coffee. Yuki is one of many young farmers that are trying to bring a new perspective to the specialty coffee industry in Brazil and discover what is possible for their families' farms. Andrés began his coffee career at Tecnicafé, an institute dedicated to coffee research and innovation. He later joined the staff at Finca El Paraiso, one of the most famous farms in the world overseen by the legendary Diego Samuel Bermudez. At this farm, Andrés was in charge of soil studies and process standardization. Andrés’ experiences up to this point have given him a unique skill set to conduct highly complex experiments -  all while maintaining a high standard and consistency at his farm, El Sendero, in Cauca.\u003c\/span\u003e\u003cb\u003e\u003c\/b\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eThe processing details for this coffee highlight his skill set and approach to experimentation very well. Initially, this coffee was hand harvested and floated in water to remove impurities. Then the coffee cherries were fermented in closed tanks with beer yeast for 48 hours. Next, the coffee was removed from these tanks and depulped, after which they undergo an additional 24 hour fermentation in closed tanks. For many reasons (low inventories, Yellow Rooster’s increasing popularity, warehouse fires, the list goes on) the stars never aligned for a collaboration between Commonplace and Yellow Rooster, despite our mutual interest. We continued building our relationship calibrating on Commonplace’s preferences and needs; in the latter half of 2025, we finally made a breakthrough thanks to the work of Sara Bedoya at Yellow Rooster. The lot that we purchased from Tomás this year is from El Cedro, where he grows a handful of different varieties (Typica, Bourbon, Gesha, and a few others) that all receive shade cover from cedar trees - hence the name of the farm. Tomás inherited El Cedro from his grandparents somewhat recently, located roughly 500 meters away from his other farm, El Níspero (which he has overseen for about a decade now).\u003c\/span\u003e\u003cb\u003e\u003c\/b\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eWe selected this coffee to finally begin a purchasing relationship with Yellow Rooster and to highlight a Peruvian coffee in our rotational single origin lineup. This coffee has a soft yet bright acidity, with notes of crisp yellow apple, cherry cola and a subtle vanilla note that lingers as the coffee cools.
